Tuesday’s Featured Recipe: Slow-Cooker Lemon Herb Chicken with Roasted Asparagus
- Ingredients (Chicken): 4 boneless, skinless chicken breasts; 1 large lemon, sliced into rounds; 3 tbsp olive oil; 4 cloves garlic, minced; 1 tbsp fresh rosemary, chopped; 1 tbsp fresh thyme leaves; 1/2 cup low-sodium chicken broth; salt and pepper.
- Ingredients (Asparagus): 1 bunch fresh asparagus; 1 tbsp olive oil; salt, pepper, garlic powder; zest of 1/2 lemon.
- Instructions: Pour chicken broth into a lightly greased slow cooker. Season chicken with salt and pepper, rub with olive oil, minced garlic, and herbs, then place in a single layer. Top with lemon slices. Cover and cook on LOW for 4 to 5 hours (or HIGH for 2 to 3 hours).
